Dawn rises on Mizpe Hayamim as the soft ringing of bells joins the buzzing and tweeting in the meadow. The herd absent-mindedly eats fresh grass, surrounded by endless green spaces. Any moment now, the goats, sheep and cows will begin walking the winding paths on their way home. Their milk will be served alongside fresh coffee at breakfast, as well as being used by the dairy in producing various other products – milk, cream, yogurt and 26 varieties of handmade boutique cheeses to be served during meals, or  used as the basis for dishes that fill all those who taste them with a sense of health and wellness.
